Pakistani Cuisine: Presented by Amara Sajjad

(This week’s ingredients have been shared with us directly by our volunteer chef, Amara Sajjad. All ingredients listed below are common and available from all mainstream grocery stores. Please note however that some of our chefs might make slight adjustments to the ingredients and instructions based on their own cooking traditions)
Chicken Biryani
Ingredients/Recipe
- 4 Cups – Basmati Rice
- 3/4 kg. Chicken (cut in medium pieces)
- 3 – Onion (large size – sliced)
- 1 Cup – Plain Yogurt
- 1 tsp – Garlic Paste
- 1 tsp – Ginger Paste
- 1 tsp – Green Chili Paste
- 1/2 Cup – Tomato Puree
- 1 tsp – Turmeric
- 1 tsp – Cumin Powder
- 1/2 tsp – Cardamom Powder
- 2 tsp – Garam Masala Powder
- 1 tsp – Coriander Powder
- 2 Tbsp – Green Coriander Leaves (chopped)
- 12 Cup – Milk
- 7 Tbsp – Cooking Oil
- ? – Salt (as required)
- 4 Tbsp – Shan Biryani Masala (Superstore, Walmart, or Asian Market)
- 2 Pinch – Orange Color
