Lomo Saltado (Peruvian Style Beef Stir Fry)

Ingredients/Recipe

  • 800 grams – Beef Tenderloin (cut into 1’x4′ strips)
  • 400 grams – Potatoes (cut into batons – to be fried)
  • 1 1/4 Cup – Vegetable Oil
  • 1 – Chili (membranes removed) (optional)
  • 2 Cloves – Garlic (finely chopped)
  • 1 – Red Onion (cut into strips)
  • 4 – Tomatoes (skinned and seeded)
  • 1 or 2 – Spring Onion
  • 1 Tbsp. – Cilantro (chopped)
  • 5 Tbsp. – White Wine Vinegar
  • 4 Tbsp. – Soy Sauce
  • 3 Tbsp. – Oster Sauce
  • Salt (to taste)
  • Pepper (to taste)
  • 1 – 2 Cups – Rice (optional)
